The Peat Inn restaurant near St Andrews ('the home of golf') in Fife, a legend of Scottish cuisine for thirty years, is now rejuvenated in the hands of new chef/proprietor Geoffrey Smeddle. Smeddle, of Glasgow's etain, invigorates The Peat Inn's tradition by using the freshest local and artisanal ingredients to create dishes with classic French foundations. The six-course tasting, daily changing and a la carte menus feature dishes like his signature braised daube of beef with confit potato and red wine jus. The former coaching inn is a refined, classic restaurant with a formidable wine list, too. Stay the weekend in one of the eight romantic suites and bring the clubs.
