Right opposite Brighton Pier is the Holiday Inn Brighton Seafront, and its Garden Restaurant looks out over the sea. It's light, airy and informal - an oasis of calm in the daytime and a romantic spot for candlelit dinners when night falls. Start with homemade salmon and herb fishcake, nicely set off with caramelised cherry tomatoes with a Dijon and chive dip. Follow with beef, chicken or vegetable fajitas, which arrive sizzling at your table with a trio of cool dips and warm tortilla wraps. When it's time for dessert you're faced with the agonising choice of mocha custard tart with an iced pear parfait or a softly-set rum and chocolate bread-and-butter pudding with a dollop of crème fraîche.
