Okay, we love the address 'Number One The Shore', and that's not all that is loved at Fishers Bistro, a long-time favourite in Leith with views over the water. The place is small, set on a windy corner, with relentlessly nautical decor, sea blue walls, and bare wooden floors. It's smart, like a well-kept boat. Fish is probably what you'll be having here, but the fish will have been fancified, transformed. Yes, there are superb raw Loch Fyne oysters, but there are also dishes like starter of seared tuna steak with chilli and lime couscous salad, main course of roast rainbow trout with artichoke sauce and smoked oysters, and dessert of chocolate cheesecake. The wine list is heavy on good bottles with lightweight price tags, and the staff make you feel as if they care about your happiness and would like to see you again.

What a fun place Fishers would be for a birthday or celebration, it's so tiny that it seats just 38, with another 14 outside. The small circular bar is a fine meeting place, and the tongue-in-groove low-ceilinged dining room is charmingly kitted out in fisherman-themed decor. The kitchen, however, is serious about fish. The menu changes all the time, but dishes could include creamy fish soup starter, main course of seared tuna on braised leeks with rocket gnocchi and red wine, mushroom and truffle gravy, and dessert of amazing Luca's ice cream. The atmosphere is absolutely abuzz.
