Aqua-Vitus restaurant in Chester is the nearest you can come to a charming, European-style bistro without getting your passport out. Birgitta and Graham Burling (he's the chef) have conjured up an intimate and romantic yet casual establishment, from the curving front awning to the two-level dining rooms with their golden walls, exposed brick, brass chandeliers, skylight and white table linens. The eclectic French menu with its touches of Swedish cuisine is one to satisfy gourmets, using fresh, seasonal produce. Dishes change constantly, but the very traditional Swedish herrings three ways with a shot of Aquavit are always on. Not an Aqua-Vitus signature dish, says Graham, just a bit of fun. Aqua-Vitus's location in Chester near the Town Hall and Grosvenor Shopping Centre place it right where you want it, but even if you had to charter a coach you'd be glad to hold your party or event here. The slightly lower-level rear dining room is great for private events, seating up to 20. The hosts are happy to organize live music, wine tastings and specialty menus and the intimate, friendly atmosphere is a treat.
